How Long Does the “Hot Ice” Made From Sodium Acetate Stay Frozen?

Question by Michelle: How long does the “Hot Ice” made from sodium acetate stay frozen?
And why?

Answer by Brandir
Hot ice isn’t really ice at all, but crystalline sodium acetate; the formation of crystals from an oversaturated solution of sodium acetate is exothermic, thus the term “hot ice”. The crystals will stay as they are forever, unless you add more water, or heat the crystals (which can invert the exothermic process; many reusable pocket-warmers rely on this very principle). The crystals will, in both cases, not melt as such, but they will dissolve again.
