Diana Rein shows you how to make raw vegan ice cream in 10 minutes. You don’t need an ice cream maker but it would be best for you to have a high speed blender. Recipe: 1 cup raw cashews (soaked for 5-6 hours in water, then drained) Meat from 1 young thai coconut 1 cup of coconut milk 1 cup raw agave nectar 1/4 cup virgin coconut oil (got mine from Whole Foods) 1 tblsp vanilla extract 2 heaping tblspns of raw cacao powder (optional, you can also add any other flavor in the form of fruit like strawberries, bananas, blueberries, etc.) Place all ingredients EXCEPT FOR CASHEWS in high speed blender. Blend for about 2 minutes. Add Cashews Blend for another 2-3 minutes or until smooth Pour mixture in containers and place in freezer Once mixture is frozen, scoop it up and enjoy!
